Make A "Disease-Fighting" Rice Pudding For Dessert

A “disease-fighting rice pudding” seems to be a lot of pressure to put on one small dish, but this one is  such a winner for its healthy choices, simplicity in ingredients, and its ability to be indulgent without any of the guilt! Of course, since it is such a heart healthy option due to its containing coconut milk instead of whole milk, and brown over white rice this pudding might just help you to prevent a variety of heart and blood related diseases!

The best part is that this healthy treat can be enjoyed for breakfast, as a snack, or for dessert! Its versatility lies in the fact that it’s a slow cooker recipe so all the thought is taken out of enjoying it later when you are in the mood for it, instead of requiring immediate cleanup which can be mildly annoying.

Because it is considered a “paleo” recipe, everything in this dish is all-natural, unprocessed, and gentle on your digestive system. Quite “clean” eating, if you ask me, plus its vegan which means that it is also appealing to those who choose a plant-based eating regime!

Lite Coconut milk creates creaminess without a high calorie content!

Whole coconut milk tends to have more of the fatty acids that are great at reducing your amount of LDL cholesterol (the “bad” cholesterol) and promoting your HDL cholesterol (the “good” kind). Whereas “Lite” coconut milk is simply strained a little further to take out some of the fat content making it fewer calories!

All coconut milk contains electrolytes such as magnesium and potassium in good quantities which are necessary for muscle growth, maintenance, and repair!

Brown rice gives us our base, and the bulk of our “pudding” (hello fiber!)!

Interestingly enough, all white rice was at one time brown rice, according to George Mateljan Foundation for the World’s Healthiest Foods. The preparation process, you see, polishes the rice so much that the kernel and bran fall off it, and brown rice is rice not having gone through that entire process leaving some of its nutritional value intact!

Brown rice is certainly a great deal as 88% of your daily manganese is found in 1 cup of brown-rice, and interestingly enough its gluten free!

Paleo Brown rice “pudding” (Adapted from a recipe by Health-Holistic-Living.com)

Ingredients:

  •     1 cup U.S.-grown short grain brown rice
  •     1 can light coconut milk
  •     2 cups water
  •     2 tablespoons maple syrup
  •     1 teaspoon vanilla
  •     2 teaspoons cinnamon
  •     1/2 cup raisins

Directions:

Step 1) Place all ingredients, except the cinnamon and raisins at this moment, into a slow cooker and leave for 3 hours and 35 minutes on low!

Step 2) Add your cinnamon and raisins (and even a little more if you prefer extra)

Step 3) Enjoy for breakfast, as a snack, or for dessert!
