Make tasty mini apple pie bites using a mason jar

Nothing says DIY more than using mason jars! And here’s a twist on a home-made classic – mini mason jar pies. Using small, 4-ounce mason jars, you can make the most adorable, one-serving pies anywhere around. Here’s what you need for this semi-homemade recipe:

Ingredients

  • 4 tablespoons of unsalted butter
  • 3 McIntosh apples
  • ½ cup of brown sugar
  • 3 tablespoons of all-purpose flour
  • 2 teaspoons of cinnamon
  • ½ teaspoon of ginger
  • 1 teaspoon pure vanilla extract
  • 1 package of store bought pie crust (1 circle)
  • ¼ cup milk (whole, skim, almond, etc.)
  • 1 teaspoon of sugar

Directions

Preheat the oven to 400 degrees F.

Put 4, 4-ounce mason jars on a cookie sheet.

Take 1 prepared pie crust out of the packaging and carefully spread out on a flat surface. Using the mason jar lid as a guide, cut 16 circles. Tip: Roll the dough at some point to get the final few circles cut. If you roll the dough initially, you will likely yield more than 4 mini pies.

Using 3 circles for each mason jar, place each, one at a time in the mason jar, covering part of the bottom and the side. Then, press the overlapping dough firmly against the sides and bottom, smoothing it out all around. Put the prepared jars to the side.

Dice the unpeeled apples and place to the side.

In a saute pan, melt butter and add the add the apples. Sauté for 4-5 minutes.

Add sugar, flour, cinnamon, ginger and vanilla extract, and sauté for 2 more minutes.

Let the mixture cool to room temperature. Tip: Place in refrigerator for quicker cooling.

Scoop the cooled filling into the prepared mason jars, filling to the top.

Place the top circle over the filling and crimp the edges with your fingertips. Chill pies in the refrigerator for 10 minutes.

While pies chill, pour a ¼ cup of milk into a small bowl. Brush milk over the top of each pie and then sprinkle each with a ¼ teaspoon of sugar.

Poke small vents into the top of each pie with a fork or knife.

Bake the pies 20 to 25 minutes or until golden brown. Cool for at least 10 minutes before serving.

These pies are simple to make, delightfully delicious, perfectly portioned and absolutely adorable!
