Let’s get that mouth-watering.
From Uzbekistan and Georgia (the country) come two very easy-to-make at-home dishes. So get that kitchen ready and that phone at hand for those Instagram-worthy shots.
The first is Uzbek Katlama with onions.
You will need:
- wheat flour – 550 g
- salt – 1 tsp.
- olive oil – 2 tbsp.
- water – 300 ml
- onion – 4 pcs.
- green onion – 10 branches
- salt – 1 tsp.
- ground black pepper – ⅓ tsp.
- smoked paprika – 1 tsp.
- butter (melted)
- olive oil
To make the dough, take the flour, salt, olive oil, and water and put them in a deep bowl or a large flat surface. Knead them together and set aside for twenty minutes.
Grab another mixing bowl.
Knife skills come in handy so grab the onions, peel them well and thinly slice them. Dump the onions in the bowl then grab those green onions.
Chop them up nicely then put them in the bowl. Salt, pepper, and smoked paprika go into the bowl and now you have an excuse to get your hands dirty. Mix them up!
Now go grab the dough and cut it in half right down the middle.
Roll one out with a pin, making sure it’s evenly flat. Brush the surface with melted butter then grab a handful of the onion mix and spread it evenly on the surface.
The tricky part is folding the dough in neatly, tucking and folding without messing up the onions. Roll along until you find a rhythm, then just follow until it forms a sort of ball.
Flatten the dough gently then fry both sides for five minutes on each side. And that’s it!
Up next is this super cheesy Khachapuri.
Your ingredients:
- wheat flour – 500 g
- dry yeast – 5 g
- sugar – 1 tbsp.
- salt – 1 tsp.
- milk (warm) – 280 ml
- egg – 1 pc.
- olive oil – 3 tbsp.
- cheddar cheese – 250 g
- mozzarella – 250 g
- egg yolk
In a mixing bowl, add in the flour, dry yeast, sugar, and salt. Mix them up a bit before adding in warm milk, olive oil, and an egg. Mix it well until it becomes your dough. Leave it in a warm place for an hour.
Grate the cheddar and mozzarella cheeses in a bowl, mixing them together until they stick almost like paste.
Grab the dough and tear small chunks off. Roll them out into round sheets almost like pizza dough. Grab a handful of mixed cheese in a hand, rub them into a bowl and put it on top of the flattened dough.
Pinch the sides gently then fold it up to cover the cheese. Almost like a dumpling.
Then slowly flatten the dough down the middle. Roll it out with a pin then lay it out on a baking pan. Make as many of these as you’d like.
Brush the surfaces with egg yolk then top it off with more of that cheese mix. Bake for 200 degrees Celsius at 20 minutes.
They will turn golden, fluffy, and absolutely delicious!
