As the weather turns cooler in the fall many start thinking about pumpkin spice lattes and other pumpkin flavored goods. This is especially true for the large variety of pumpkin-flavored baked goods that you can make, including pumpkin pie, bread, and cookies. Cookies in particular are good and can even be a treat year round, and all you need are some simple ingredients that you might already have in your kitchen.
Try out these soft and chewy pumpkin cookies the next time you bake. You will not regret it!
Mix your wet ingredients
Start out by gathering your wet ingredients. In fact, you might already have all or most of these ingredients already in your pantry. Stir the ingredients together so that they are well mixed. You can also pre-heat the oven at this time to 350 degrees. The wet ingredients you need for this recipe include:
- 1/2 cup softened butter
- 1/2 cup vegetable oil
- 1/2 cup pumpkin puree {canned pumpkin}
- 1 cup granulated sugar
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla
- 2 large eggs
Mix the wet ingredients with the dry ingredients
Next, you need to mix the wet ingredients with the dry ingredients. Take the combine wet ingredients and slowly mix them with the dry until they are well combined. You can also change up some of the ingredients if you like, such as switching the cloves out for ginger, for a more authentic pumpkin flavor. The dry ingredients you will need include:
- 4 cups all purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- pinch of cloves
- Ginger (optional, instead of cloves)
Make the glaze
You also need make the glaze to go on top of the cookies once they are baked. You can either do this beforehand or make it while the cookies are baking in the oven. In a separate bowl, mix the glaze ingredients until combined. Set the bowl aside. For the glaze, you need the following ingredients:
- 3 cups powdered sugar
- 4 tablespoons water
- 1/4 teaspoon pumpkin pie spice
Bake the cookies
Line a baking sheet with parchment paper and scoop the cookie dough onto the sheet using a 1-1/2 tablespoon scoop. Flatten the cookies until they are only 1/2-inch thick using the bottom of a glass. If the dough sticks to the bottom of the glass, press the glass first into granulated sugar before using it to flatten the cookies.
Place the baking sheet in the pre-heated oven and bake for 8 to 9 minutes. To check the cookies to make sure they are done, push in on the side of one of the cookies using a spatula or your finger (make sure not to burn yourself) If the edge of the cookie stays firm and doesn’t fall inward, then they are done.
Once removed from the oven, allow the cookies to cool for 3 minutes on the baking sheet before transferring them to a baking rack to cool further after you apply the glaze.
Add the glaze and allow the cookies to cool
While still warm, spread the glaze on top of the cookies using a teaspoon, putting 1-1/2 teaspoons on each cookie. Allow the cookies to sit for 2 to 3 hours, or until the glaze is hardened.
